Happy Pancake Day everyone! I hope you are enjoying or planning to enjoy some pancakes with your favourite toppings today! We’re on our way to Spain, skiing holiday, so this year I have postpone the pancake feast and make up for it when we’re back home. Unless Ryanair would serve some nice pancakes…ehm, I doubt it 🙂
My absolute favourite are kefir pancakes with sour cream and strawberry jam on top. My mum’s recipe, one of the most comforting sweet dishes I’ve ever had! They taste so fresh and light, although they’re not, obviously :). Here is the recipe…enjoy the Pancake Day (eat some more pancakes for me as well!). And I promise I’ll add some photos on my belated Pancake Day! 😉
RECIPE: Kefir Pancakes
- 2 eggs
- 500ml kefir
- 250g plain flour
- 2 tsp caster sugar
- 1/2 tsp salt
- Mix all ingredients together until the batter is smooth.
- Leave rest for 10 minutes.
- Fry in a pancake pan with a little bit of oil, for about 6-8 minutes (depends how thick they are), turn halfway.
- Use your favourite toppings – I recommend sour cream and strawberry jam.
